It’s officially 2023, which means those ‘eating clean’ new years resolutions are in full swing. Whether it’s eating more veggies, cutting down on processed foods, or simply wanting to live a healthier lifestyle, many Aussies (us included) are officially on the hunt for new and yummy better-for-you recipes to set the tone for the new year. Well, we have some good news: one of Australia’s favourite quiches is the perfect dish to kick-start your healthy-eating journey. Think edamame, broccolini, salmon… these are just a few of the delicious and good-for-you ingredients that star in this number.

High in protein, omega-3 fatty acids (thanks, salmon!), and fibre, this show stopping crustless quiche is set to be a healthy dinner staple that will satisfy the family all year-round. Not to mention, it looks incredible on the table at a get-together!

How to make the healthy quiche at home:

Ingredients

  • 1 tsp olive oil
  • 1 leek, thinly sliced
  • 2 garlic cloves, crushed
  • 2 tsp finely grated lemon zest, plus extra sliced zest to serve
  • 100g baby spinach leaves
  • 1 bunch broccolini, stems halved
  • 150g (1 cup) shelled edamame
  • 8 eggs
  • 130g (1/2 cup) high protein natural yoghurt, plus 2 tbsp extra to serve
  • 2 tbsp chopped fresh dill, plus extra sprigs to serve
  • 150g pepper hot smoked salmon fillet, skin removed, flaked

Method

Step 1: Preheat oven to 180C /160C fan forced. Lightly grease and line the base and sides of a 20cm round spring form baking tin with baking paper.

Step 2: Heat the oil in a large non-stick frying pan over medium heat. Cook leek, stirring, for 5 minutes or until softened. Add garlic and zest and cook, stirring, for 1 minute or until fragrant. Add spinach and cook until just wilted.

Step 3: Meanwhile, steam, boil or microwave broccolini and edamame until just tender. Refresh under cold running water. Drain.

Step 4: Whisk eggs and yoghurt together in a large bowl. Stir through dill and salmon.

Step 5: Scatter edamame, broccolini and spinach mixture over base of prepared tin. Pour over egg mixture and evenly arrange vegetables. Bake in preheated oven for 40-45 minutes or until golden and puffed. Set aside to cool for 5 minutes. Serve topped with dollops of extra yoghurt, extra lemon and dill sprigs.

Typically quiches are packed full of cream, butter and pastry, which means they can be quite calorie-dense. That’s why we’ve made some smart swaps to create this healthy variation, like switching sour cream for high-protein yoghurt!

What is the best dish for quiche?

Any dish that has depth to it can be used to make quiche. A pie pan, cake tin, or even a springform pan will work great. Just beware that the more shallow the dish, the quicker it cooks.

Can I make this quiche vegetarian-friendly?

If you’re vegetarian, this quiche can easily be tweaked to be meat or fish-free by simply skipping the salmon.
