No need to skip the most important meal of the day when you have bircher muesli in the fridge. A quick and easy breakfast that’s not only good for you but it tastes so good.

We are all busy right, life gets crazy, things come up an we tend to forget about ourselves. You tried to meal prep over the weekend but it just didn’t work out. Making a big batch of bircher muesli takes very little effort on your part with big rewards.

Whether you call it overnight oats or Bircher muesli it tastes equally as good. There are so many different variations to this recipe. I’m going to show you mine and then have some fun experimenting with different ingredient and flavours and make it your own.

Bircher Muesli

I’m sure you’ve heard of it, and you have probably had it for breakfast at a hotel or resort over your summer holiday but what exactly is bircher muesli and why is it so good for you?

Bircher muesli is a healthy breakfast that you can prepare ahead of time. It tastes delicious and the best part is, the longer it stays in the fridge the better it tastes.

To prepare bircher muesli you simply place your oats in a bowl with apple juice, yoghurt, grated apple and pear, a mixture of dried fruits and nuts. You then give it a good mix, cover with cling film and place in the fridge overnight.

So the star of the show in this recipe are the oats and oats have so many health benefits. these include being rich in fibre and antioxidants. Oats aid in reducing cholesterol and are low in GI which means they burn slower and keep you fuller for longer. So you won’t go reaching for that cookie at 10am.

Once you add in your fruit, nuts and yoghurt you have got yourself one healthy breakfast.

Bircher muesli is not just for breakfast! I love it for an afternoon snack or even late at night when the hunger pain strikes. Its much healthier and in my opinion much more satisfying than reaching for that packet of chips.

What is the difference between muesli and bircher muesli

On It’s own muesli has the same concept as it entails a mixture of oats, nuts and seeds. Muesli can also be toasted but the main difference between bircher muesli and muesli is that bircher is soaked overnight in apple juice and yoghurt or milk. Muesli is served dry and then the yoghurt and fruit is added afterwards.

What you will need

Here is your shopping list for making a batch of bircher muesli but you will find that you have most of these staples already!

  • oats
  • apple
  • pear
  • apple juice
  • Natural yoghurt
  • dried fruit: I use raisins, cranberries and figs, but you can use whatever is in your pantry
  • Nuts and seeds: I use flaked almonds, pepitas, sunflower seeds and walnuts
  • Cinnamon

How to make bircher Muesli

Start by getting yourself a big bowl. I love using a large glass bowl that has a lid it makes storing in the fridge quick and easy.

Add your oats, apple juice and yoghurt.

Next peel and grate your apple and pear and add to the bowl. You can use an apple corer first or just grate as close to the core as you can get.

Now add the dried fruit, nuts, seeds and cinnamon.

Stir well to combine, cover with a lid or cling film and place in the fridge for at least an hour but preferably overnight.

Tips to making the best bircher muesli

  • Bircher muesli gets better with time so I highly recommend preparing it the day/night before but if you need a quick fix then even one hour will give you a good result. just add some extra yoghurt to serve.
  • The next morning you can divide the bircher into small containers or jars with screw top lids so you have your breakfast meal prep done and ready to go when you’re in a rush.
  • For an extra health boost add 1 tablespoon of chia seeds to the mix.
  • Top with your favourite fresh fruit, some extra nuts and a drizzle of honey for the ultimate bircher experience

How long can bircher muesli be kept

Bircher muesli keeps tasting better with time and if you keep it in an airtight container it will be fresh for 4 days but I bet it won’t last that long at your house 😃

Ingredients

  • 2 cups rolled oats
  • 1 cup apple juice
  • 1 apple peeled, cored and grated
  • 1 pear peeled, cored and grated
  • 1 cup natural yoghurt
  • 1 tsp ground cinnamon
  • ½ cup dried fruit of choice raisins, cranberries, figs etc
  • ½ cup nuts and seeds of choice flaked almonds, peppitas, walnuts etc
  • fresh berries to serve
  • drizzle of honey to serve

Instructions

  • In a large bowl add the oats, apple juice, grated fruit, yoghurt, cinnamon, dried fruit, nuts and seeds. Mix well until combined.

  • Cover with a lid or cling film. Place in the frige and leave to soak overnight.

  • The following morning, divide into bowls, containers or jars. Top with fresh fruit, extra nuts and a drizzle of honey.
