How should one eat radishes? Is there really a right answer? Probably not (though I’d bet there are some wrong ones…). Either way, I’ve come across at least oneanswer which you can guarantee is definitely right: this radish snack recipe featuring the taste bud-tickling tingle of radishes topped bymy Light cheese spread and tiny cornichons. Each cheese triangle is 25 calories so you can sneak a few and not feel guilty! A quick snack which is pretty and punchy – your hunger won’t know what’s hit it.

Ingredients
- 5 large radishes, halved
- 4 triangles of The Laughing Cow Light
- 4 cornichons quartered length ways
- A few sprigs of dill
- Freshly ground black pepper
Method
- Take the halved radishes and remove a sliver from the bottom of curved side so the halves will sit comfortably facing up.
- Spread The Laughing Cow Light on each radish half.
- Place a cornichon quarter on top along with a sprig of dill.
- Season with black pepper and prepare for that mouthwatering crunch.
