Our beloved lentil bread,
Won our hearts in an instant,
Touched us all in two moments,
And made everyone more joyful and happier.

Today it had a tiny and cute nephew that you can’t remain indifferent to.
This is a lentil flatbread in a panini press.
Yes, in 5 minutes including washing the dishes, you get a precise lentil flatbread for your indulgent bite.

This nephew of my lentil bread was born with twin brothers,
It has a vegan version and an almond flour version.
Because the heart wants to give the best to everyone.

When I thought about the idea, I decided that there would be a million types of recipes that we would make together in a panini press,
And that’s exactly how it will be, expect to meet an entire family of recipes that all you need in order to make, is a panini press and a bowl.

You will fall in love, I swear!
And you have yet to meet all the other surprises I have to share with you.

Flatbread in a Panini Press

Below are other versions of this insane bread – a vegan version and a version using almond flour, worth scrolling down 🙂

Ingredients: suitable for two slices of bread for a perfect sandwich

  • 1 egg (size M / L)
  • 1 tablespoon water
  • Pinch of salt
  • 2 tablespoons lentil flour

Steps:

  1. Heat the panini press to high power.
  2. Put the egg, water and salt in a bowl and mix well.
  3. Add the lentil flour to the bowl and mix well until all the lumps of flour are incorporated into the batter.
  4. Let the batter rest for 20-30 seconds.
  5. Place parchment paper in the panini press and grease it a little. Pour the batter into the center of the panini press
  6. and place another greased parchment paper on top, try to stick the parchment paper to the batter.
  7. Close the panini press and let the batter cook for 3-5 minutes (depending on the power of your panini press).
  8. After 2-3 minutes check the batter. If it has dried out on both sides, remove the parchment paper sheets and let the flatbread cook a little more in the panini press until it’s done to your liking. How well do we want it done? The more it’s in the panini press, the crispier it will be, and the less it’s in the panini press, the softer and cloudier it will be. The choice is definitely up to your personal taste 🙂

Take the bread out of the panini press, cut it into two halves, fill them with goods and devour 🙂

The Vegan Version

Ingredients: suitable for two slices of bread for a perfect sandwich

  • 1 tablespoon raw tahini / almond butter
  • 3-4 tablespoons water
  • Pinch of salt
  • 2 tablespoons lentil flour

Steps:

  1. Heat the panini press to high power.
  2. Put the tahini, water and salt in a bowl and mix to get a thin tahini batter.
  3. Add the lentil flour to the bowl and mix well until all the lumps of flour are incorporated into the batter.
  4. Let the batter rest for 20-30 seconds.
  5. Place parchment paper in the panini press and grease it a little. Pour the batter into the center of the panini press and place another greased parchment paper on top, try to stick the parchment paper to the batter.
  6. Close the panini press and let the batter cook for 3-5 minutes, depending on the power of your panini press.
  7. After 2-3 minutes check the batter. If it has dried out on both sides, remove the parchment paper sheets and let the flatbread cook a little more in the panini press until it’s done to your liking. How well do we want it done?   • I recommend eating close to preparation. If you have prepared in advance for a work day / picnic, make sure to pack well so that the flatbread doesn’t dry out excessively.
