When it comes to choosing walnuts for this recipe, I prefer to use Diamond of California shelled walnuts. My mom would always use Diamond Nuts in her recipes when I was growing up. Today, when I need walnuts for a recipe, I always look for the Diamond brand because I know they’ll be fresh.

The larger shelled walnuts, instead of chopped nuts, are the perfect blank canvas to roast and then glaze in the delicious honey cinnamon mixture.

How to Make Honey Glazed Walnuts

Step 1: The first step in making this recipe is to gather your ingredients. To make these sweet and sticky glazed nuts you’ll need Diamond shelled walnuts, ghee, honey, vanilla extract, cinnamon, and sea salt

Step 2: Next, it’s time to toast your walnuts. If you are short on time, you could skip this step, but I think it adds even more delicious flavor to the nuts. To toast the nuts, just spread them on a parchment lined baking sheet and toast 350 degrees for 10 minutes. Then, remove the nuts from the oven and let them cool.

Step 3: After the nuts are toasted it’s time to make the honey glaze. To do this combine the ghee, honey, cinnamon, vanilla extract, and a pinch of sea salt in a small non-stick pot or skillet. Cook the mixture over medium heat until it begins to bubble and become frothy.

Step 4: Add the walnuts to the honey glaze mixture and let cook for 3-4 minutes stirring the nuts constantly until they are glazed.

Step 5: Pour the walnuts out onto a parchment lined baking sheet. Separate them using the spatula or a fork so that they are in an even layer on the baking sheet. Allow the nuts to cool completely before transferring them to a storage container.

  • 2 1/2 cups Diamond of California Shelled Walnuts

  • 1 ½ tbsp ghee

  • 1/4c honey

  • 1 tsp vanilla extract

  • 1 tsp cinnamon (optional)

  • 1/4 tsp sea salt

Instructions

  1. Preheat oven to 350 degrees. Spread the walnuts on a parchment lined baking sheet and toast for 10 minutes. After 10 minutes, remove the nuts from the oven and let them cool.

  2. While the nuts are cooling, make the honey glaze. Combine the ghee, honey, cinnamon, vanilla extract, and a pinch of sea salt in a small non-stick pot or skillet. Cook the mixture over medium heat until it begins to bubble and become frothy (roughly 2-3 minutes).

  3. Add the walnuts to the honey glaze mixture and let cook for 3-4 minutes stirring the nuts constantly until they are glazed.

  4. Pour the walnuts out onto a parchment lined baking sheet. Separate the nuts using the spatula or a fork so that they are in an even layer, and not clumps, on the baking sheet. The glaze on the nuts will harden as they cool. Allow the nuts to cool completely before transferring them to a storage container.
