This recipe is essentially perfect as-is. I've been cooking a diversity of recipes from Yummly for the past year, and I think this may be the best side dish I've tried. I had to prolong my cooking time by about 10 minutes. I may try adding peppers or asparagus next time, but this will be a go-to dish for me for a good long while.

This was good, but i would tweak the recipe in these ways:1. Add italian sausage2. Roast the garlic by itself until fully roasted and add later3. Serve over pasta

Autumn Morgan 5 years ago

Loved it. Roasted veggies are one of my favorite foods. This was a nice twist. I cooked it closer to 30min on convection roast and it turned out great.

Didnt feel co*cktail tomatoes belonged here but subbing them fir anything else could be decent.

Jessica Herring 5 years ago

Couldn't find cremini mushrooms so subbed baby bellas. Also used asparagus instead of cauliflower and added a splash of balsamic vinegar. Delish!

Jeff Lewallen 5 years ago

Simple and elegant, used fresh herbs and that definitely makes a nice difference. Like most, I used a few other soft veggies to throw in the mix also. Use what you, and your audience, like to eat.

FAQs

What vegetables pair well with mushrooms? ›

Cabbage is great with mushrooms! That's like basic Russian peasant food right there. It won't look very pretty though. Roasted root vegetables (carrots, parsnips, potato, onion) would go well with it too.

What is the secret to roasting vegetables? ›

If you crowd and overlap the veggies, they will steam and get mushy, not what we want! Roast vegetables at a high heat, 425 degrees F and make sure you preheat the oven so it is HOT when the veggies go in! Flip! For even browning and caramelization, flip vegetables halfway through cook time.

What type of mushroom is best for roasting? ›

For our roasted mushrooms recipe, we use cremini mushrooms but you can make it your own and roast portobello, shiitake, or button mushrooms – whatever you have available! Cut into quarters and drizzle with olive oil and salt! Pro tip: place them cut-side down in a single layer to get that crispy bottom!

Is it better to roast or saute mushrooms? ›

Roasting mushrooms is easy and one of the best ways to cook them. I roast mushrooms with olive oil and herbs until golden brown, then stir in fresh garlic a few minutes before they come out of the oven. Our oven-roasted mushrooms are simple and so flavorful.

What herb or spice goes well with mushrooms? ›

There are many different herbs that pair well with mushrooms in cooking. Some of our favourites include thyme, rosemary, sage, oregano, and parsley. Each of these herbs has a unique taste and can add a different flavour profile to your dish.

Should I season vegetables before or after roasting? ›

Step 2: Add Some Flavor

It's always best to toss the veggies with a little oil and seasoning (at least 1 tablespoon of oil for each baking sheet of veggies) before they cook so they don't stick to the pan. Bonus, the fat helps you absorb some vitamins (fat-soluble vitamins A, D, E and K) in your vegetables.

What baking ingredient makes roasted vegetables so crispy? ›

Turns out, there's a simple ingredient that can boost the crispiness of roasted vegetables and most of us already have it in our pantry: cornstarch! Yes, the same ingredient chefs use to make velvety sauces and gravies can also add a satisfying layer of crispiness to roasted vegetables.

What is the best oil for roasting vegetables? ›

For Fat and Flavor When Roasting, Choose Olive Oil or Ghee

For vegetables, chicken, and just about everything else, olive oil and ghee are our first choices for roasting at temperatures over 400°F.

What is the most flavourful mushroom? ›

Maitake. Also called Hen-of-the-wood, this is pound-for-pound the most flavorful mushroom around.

Which Italian mushroom is often used dry? ›

In Italian, porcini means “piglets,” a rather diminutive-sounding name, but don't let that fool you. These are the reigning kings of edible mushrooms. Famed for their earthy, nutty flavor, they're an integral ingredient in Italian cuisine, often used to enhance risottos, pastas and sauces.

What is the healthiest mushroom to cook with? ›

Shiitake, Oyster, and Lion's Mane mushrooms are considered one of the healthiest mushrooms. The shape, color, size, and flavor of mushroom varieties differ, but they do share similar nutritional values. Most mushrooms offer: Carbohydrates.

What we should not do before cooking mushroom? ›

Never salt the mushrooms before cooking. Salt draws out moisture and will therefore make them extremely mushy.

Is it better to cook mushrooms in butter or oil? ›

Butter: Butter can add richness and flavor to sautéed mushrooms. It has a low smoke point, so it is best used over low to medium heat. Coconut oil: Coconut oil has a high smoke point and a distinctive flavor that can complement the taste of mushrooms. It is also a good source of healthy saturated fats.

Ideas to Try
  • Chop and mix chopped mushrooms into ground beef or turkey while cooking (see Mushroom Beef Sloppy Joes below).
  • Slice raw mushrooms and mix into a salad.

Are mushrooms good or bad for vegetable gardens? ›

They indicate that your soil is healthy and contains lots of organic matter. In addition, they benefit your garden in many ways. Mushrooms help break down organic matter, which increases the number of nutrients in the soil. The more nutrients in the ground, the more your plants thrive.

Can we eat greens and mushrooms together? ›

When it's ready, you'll have a giant pot of satisfying greens and mushrooms to go with your main dish. I served these greens as a side to decadent pasta, but it also goes well with some brown rice and a simple protein, like Classic Roasted Chicken or Seared Pork Chops with Mustard Pan Sauce. Enjoy!
