Hot summer days beckon for chilled refreshments. Maybe your go-to, cool-down beverage is a creamy milkshake. Instead of a heavy ice cream drink, think lassi instead. Traditional lassi is a savory blend of plain yogurt, water, and spices like ground cardamom. It often accompanies meals as a digestive aid and for its cooling properties.
With yogurt or buttermilk as its base, savory and sweet lassi lends itself to a variety of flavor combinations, such as the popular mango version. Try adding in some rosewater or a rich saffron version. For this lassi recipe, we made it simple: buttermilk, ice, and fruit. Depending on how sweet your fruit is, add a pinch of sugar or cinnamon to taste!
Buttermilk Strawberry Lassi

Servings 2 cups
Ingredients
- 1 cup buttermilk*
- 1/2 cup ice
- 1 1/2 cups hulled ripe strawberries (or other ripe fresh fruit)
- 1-2 tsp sugar
- 1 pinch ground cinnamon (optional)
Instructions
Place all ingredients in a blender and process until smooth and frosty. Taste and add more sugar or ice, as needed.
Serve chilled and enjoy!
Buttermilk Substitute
Instead of buttermilk, you can use 1 cup plain yogurt and thin out with water, as needed.
