- 1 tbsp 1 tbsp butter, for greasing the baking dish
- 4 oz. 110 g zucchini
- 2 (8 oz.) 2 (220 g) yellow onionyellow onions
- 3 3 garlic clovegarlic cloves
- 5 oz. 140 g cherry tomatoes
- 1¾ cups (7 oz.) 425 ml (200 g) fresh mozzarella cheese
- ½ tsp ½ tsp sea salt
- ¼ tsp ¼ tsp ground black pepper
- 1 tbsp 1 tbsp dried basil or dried thyme
- 1½ lbs 650 g sausage in linkssausages in links

Making low carb simple
Instructions
Preheat the oven to 400°F (200°C). Grease a baking dish with butter.
Divide the zucchini into bite-sized pieces. Peel and cut the onion into wedges. Slice or chop the garlic.
Place zucchini, onions, garlic, tomatoes, and sausages in the baking dish. Dice the cheese into inch-sized pieces and place it among the vegetables. Season with salt, pepper, and basil or thyme.
Bake for at least 30 minutes or until the sausages are thoroughly cooked, and the vegetables are browned and caramelized.
Tip
This dish is the perfect crowd pleaser, so double or triple the recipe for a party!

zucchini is the squash, recipes says one small zucchini. I am sure you can use basically as much or as little zucchini as you like.

The counts of this recipe are WAY off. People forget onions have a ton of carbs 15 per onion and this calls for 2 (in my calculations I only used nutrition of half an onion as that is what I used, thank goodness), Mozerella has 8, garlic has 1 per clove, a zucchini has about 6, the tomatoes have about 12, Thyme alone has 3. From my calculations the recipe nutrition per serving ( 1/4 of dish) looks like this:
Cal 630.25
Carb 14.6
Protein 29
Fat 53.175That being said it is SUPER DELICIOUS, just not Keto friendly. This is very misleading. It makes me nervous about other recipes on this site.

Nicole: You need to factor in the fiber. Add up the fiber for the ingredients you listed and then subtract that number from the total number of carbs. This will give you the total net carbs.

My guide says a large onion (5&1/2oz.) is 15 carbs. I would consider that 2 onions. I noticed in my cookbooks they will call for a large onion but also give a measured amount. A large onion today is always double or triple what it calls for. I personally have never thought of counting spices. Maybe it would be nice if they put in ounce values for the veges.6

This recipe is so good, though I would advise if using pre grated mozzarella to add it half way through cooking. I also only used half a large courgette (zucchini), red pepper in mine and half an aubergine (eggplant). A good dish for using up veggies and the flavours were great. Thyme works much better than basil inn my opinion too.

You can always spice up the recipe with some chillies and add cream cheese at the end instead o Mayo. Like a Mexican fusion...

I did half the cheese (used cheddar and cream cheese as I was out of mozzarella ) didn’t have tomatoes so I used red/yellow peppers instead. Also I used just a quarter of an onion. This is a low carb dish not a keto dish, but with some simple changes it’s easily made keto. Yum

This was delicious. I used only half an onion and red pepper and mushroom. I also only used abut three ounces of the cheese. I used mild Italian sausage. It was so good! ?

I used one large onion, and it came out really, really wet. The onion released so much water into the dish, it was like soup at the bottom. It was tasty, but nothing special. If I were to make it again, I’d up the zuchini, maybe add some mushroom, and decrease the onions.

Excellent recipe the whole family loved and one tray to prepare. Not an onion fan I replaced with small amount of shallots and mushrooms. Used dried rosemary and oregano. Also used about half the oil.

That is going to depend on the type, source and brand of your sausage. Some have carby fillers, so you will want to read the ingredients and nutrition label.

This was yummy. However, I ended up with a lot of liquid in the bottom of the pan. I just used my serving spoon to drain some off as I served it, however, then you loose some of the fat from the EVOO. I guess you could always drizzle some more over. Also, I like mayonnaise but I felt like the mayo kinda masked the yummy flavors so I just ate it first for the fat.

You can use those. In the USA, sausage can be patties, links (like what you've got, or same shape but unjoined) or as loose ground pork with spices added.

I made this last night. It was very tasty but I lost most of the cheese as it stuck like cement to my serving spoon and dish, I think 40 minutes for mozzarella is far too long. I will make it again but add my cheese in the last 10 minutes of cooking so it just softens nicely

Our listed carb count and nutrition information is always per serving, not for the whole recipe. This is a moderate low carb recipe and is 14g carbs per serving.

That is going to depend on how much the veggies reduced as they cooked. Each recipe specifies the number of servings that it makes rather than serving size, for accuracy.

You put the sausages on the pan at the same time as the vegetables. You can place them in any order as long as it is before they go in the oven.
