Yup, I'm at it again. Messing with those Ramen noodles (Click here to see my other Ramen ideas). Here's the deal, it's Friday, I'm in desperate need of a grocery shopping trip. I just got home from a 2 hour workout with an awesome trainer who kicked my butt and, dude, I was HUNGRY.
What's a girl to do?
Hit her pantry of course!
Armed with those "healthy" Ramen noodles and a couple of stock items I whipped this up. Oh my! So yummy and super filling!
Ingredients
- 1 package of Choice Ramen Noodles chicken
- ½ cup of water
- 1 teaspoon chili powder
- 1 teaspoon dried cilantro
- ½ teaspoon ground cumin
- 1 can pinto beans rinsed and drained (15oz)
- 1 can diced tomatoes (15oz)
Instructions
In a medium pot place the dry Ramen noodles (break if you want they do tend to clump together). Top with the can of diced tomatoes and ½ cup of water.
Crank the heat up to high. Leave alone while you sprinkle the top with the chili powder, cilantro, cumin and ½ of the seasoning packet (done to reduce sodium.)
Start to stir the noodles. They should start getting soft and break apart. After 3-4 minute drop the heat to medium. Add the drained pinto beans. Stir in really trying to break apart the noodles.
Cook for another 1-2 minutes. Serve!

I sprinkled a bit of dried cilantro and fancy shredded Mexican cheese blend. So YUMMY!

Since seeing the last post on these Ramen Noodles, I have been on the hunt but haven't been able to find them. We really need them around the house because the husband and the little girl LOVE them. (Secretly I do too but half a package for 4 points is hard to stomach.)

I just had to email again on this ramen noodle recipe--I didn't have lunch ready this morning for DH & me (we work together) so I took a whopping 5 minutes & put this together for us. I just served Dh his helping & he loves it! So so yummy. One of my favorites, & it is so simple (which is why it's one of my faves, LOL).

I just wanted to tell you that I bookmarked this when I was looking for recipes one day, and had forgotten about it. Tonight, I realized, like you that I need a major grocery trip, but don't have time. So, I pulled up my bookmarks to look for something quick and easy. I tried this, but made it in a bigger volume to feed my family. It's awesome!!! Thanks!

Holy cow, this is awesome! I made my dried pinto beans that were about to expired on Sunday, and this morning before work I whipped this up. Exactly as you created it (except that the beans weren't canned) and it's delicious. Very easy, fast, tasty. This is going to be a new favorite!! Thanks for another super recipe, Roni. Quick question...can't find these noddles in Ontario Canada...this looks so amazing though that I was wondering if I just got the regular ones how that would be? I am not familiar with these noddles hence my dah question...thanks Roni!

This looks really good....I have got to tell you that I made a dish that tasted soooo much like ramen noodles with less than half the points! I sauted onion, green and red peppers, mushrooms (load in any vegetable)THE MORE THE MERRIER!!!! (I learned that is called volumetrics the other day) in pan with 1tsp oil. Nuked a spagetti squash and added to my mixture with 1 heaping tsp chicken bouillon, and a little poultry seasoning. I like sage too...but that is so optional. You know the drill...add what ya like. Then.....to top it off fresh parsley and a little parmessan. OMG!!!!!! SOOOOOOOOOOO GOOD. You would never miss the ramen. And I am a noodle lover! 🙂 I have a kabillion spagetti squash that I am trying to rid myself of. Really trying hard to like this vegetable and FINALLY came up with this and LOVE LOVE LOVE IT!
