HOW CAN I TELL IF ITS DONE?
Flesh will be pale orange and flaky on the outside with a bright orange/red opaque center.
I am looking for a slight color gradient in the thickest part of the filet. The center should be slightly translucent. Remember, the salmon will continue to cook after it's removed from the heat.
Take a look! Don't be afraid to break it open. The fillet will naturally want to crack open in the thickest part where the pin bones have been removed. Use a fork or knife to check the thickest part of the salmon. You are checking for color and flakiness.
Sockeye salmon is best served medium rare. Internal temperature should be about 110-115 in the thickest part.
Just remember, always use a timer and be conservative. You can always cook it a little bit more if needed.
