Do you remember theMinty Strawberry-Lime Icebox Piethat I shared here on the blog a while back? It’s one of my favorite pies. It’s easy, it’s no-bake, and the best part: it has thecombination of strawberryand mint. It’s one of my most favorite things ever.

Quite often, I find myself craving that strawberry and mint combo. I usuallydismiss the craving, because while I couldeat that pie every week, I’ve accepted that it’s probably not a good idea. But this week, strawberry and mint popped into my head again…and I came up with a great idea.

See, I’ve been back on my smoothie kick again. Does anyone else do that? Start making them for a while and then stop? I do it regularly throughout the year. I stopped making smoothies for a while , but after the start of the new year,I was was craving foods that were better for me. I love the way I feel when I drink a smoothie in the morning, so I pull out my Ninja blender and started blending them up again.

This weekI was a bit bored with my usual smoothies. And that’s when the most wonderful thing happened: strawberry and mint popped into my head. With just a bit of experimenting, I came up with a Strawberry Mint Smoothie recipe that I know I will be making A LOT, plusyou’ll love it too.

For the milk, I used my usual skim milk, but you can use reduced fat milk or whole milk if that’s what you usually use. For the yogurt, I prefer regular yogurt, which is why I went with that (vanilla flavor). You could useGreek yogurt, if you prefer, which will increase the protein in this even more.

You’ll need frozen strawberries too. I bought a bag of them at the grocery store, but when prices are low in the spring and summer, I buy lots of fresh strawberries and freeze them myself. You’ll also need fresh mint and honey.

This Strawberry Mint Smoothie recipe is SO easy. Just place all the ingredients in a high-powered blender (I love my Ninja and use it for all my smoothie making) and blend away!

Before you pour into glasses, you might want to give it a quick taste and adjust any of the ingredients as desired. For example, if you would like it sweeter, add more honey.If the smoothie is too thick, you can add a bit more milk. In one batch that we made, we felt that the mint needed to be stronger, so we tossed in a few more leaves. It’s a flexible recipe, so feel free to adjust according to your preference.

This recipe makes about 30 ounces of smoothie, which I think is perfect for 2 servings. Just pour into glasses and enjoy!

  1. Place all ingredients in a high powered blender. Process until fully blended and smooth. Taste test and adjust ingredients, if necessary. Pour into glasses and serve immediately.
