Will my apple butter be safe? - Ask Extension (2024)

Asked October 21, 2013, 12:29 PM EDT

I made my first batch of apple butter yesterday. I slid down the sides of the jars after they were filled to release air bubbles, tapped the jars on the countertops too, as it was very thick, and then slid down the sides again before I processed. This morning I noticed several pockets of air in the jars. Will my apple butter be safe to store at room temperature? Or will I now have to refrigerate it and consume it quickly?Thank you.

Expert Response

Apple butter is notorious for air bubbles, since it is so thick they don't rise to the surface as they would in a product that had liquid in it. The jars should be fine as long as it was processed properly and all the lids are sealed.
